Pre-Mix vs. Post-Mix: Which to Use for Your Beverage Dispenser?

When setting up a cold beverage dispenser at your restaurant, convenience store, or food stand, there are primarily two kinds to choose from: pre-mix and post-mix. There are definitely specific situations in which it is better to use one over the other, especially because of the issues of cost, complexity, and available equipment.

Pre-Mix
A pre-mix soda dispenser is simpler, yet more costly, than a post-mix dispenser. The only equipment needed is a CO2 tank, the dispenser, and ice. The ready-to-drink soda is delivered in canisters or large metal containers. There is no need to mix the drink; it is already mixed to taste just as it would be in a bottle or can. Essentially, you are paying the same price as a local store or supermarket that sells the beverage, whereas post-mix sodas are made with syrups and soda water that are mixed to taste within the machine, which is more cost-effective. If you do not have a water line, then you have no option but to use pre-mix, as a water line is required for post-mix soft drink dispensers. Post-Mix
Post-mix soda fountains require more extensive equipment, including a CO2 tank, the dispenser, a carbonator, syrup, syrup pumps, regulators, hoses/tubing, BIB connectors, stainless fittings, and ice. Since soda is five parts water to one part syrup, you need a clean, continuous source of water. Your water line needs to be at least 3/8 inches in diameter; otherwise, the carbonator will likely fail. With a source of water, the only thing you must continuously pay for is the syrup, which is much cheaper than paying for pre-mixed drinks, and is easier to deliver and store. Busy fast food restaurants and larger stores almost always opt for the post-mix cold beverage dispenser.

Making the Decision
If you are a more medium sized business with a steady stream of traffic, although not particularly busy throughout the day, such as some convenience stores, the decision between pre-mix and post-mix may require more thought. Some businesses that sell a drink regularly, but not frequently, will opt for the pre-mix solution for that particular beverage, while relying on post-mix dispensers for other, more frequently sold beverages. If you have a water line available, and are planning on using the soda fountain for the long run, then a post-mix dispenser will likely be more cost effective overall.
